A workflow is a named, ordered set of actions that runs against a contact: make a call, send email or SMS, create a task, add or remove a tag, change status, assign a user, add a note, drop a voicemail. It starts on a status or owner change, can be gated by filters, and is tracked per contact. Triggers react once; workflows run a sequence.
